Although I’ve traveled through many parts of India and a few places abroad, I think that surely Kolkata’s is some of the best Biryani.
If Biryani is new to you, here are a few quick facts:
Biryani, like stew or masala, means different things to different cooks. It always includes rice (usually basmati), and may contain cashews, meat chunks, potatoes, various herbs and spices, all baked or steamed into a delectable, mouth-watering dish. I prefer mutton biryani, and people say that my recipe (from Mom) is one of the best.
Like performing a song, I will not take credit for the original creation, I simply try to remain somewhat true to the original version, perhaps with an apt variation depending upon how I feel or want to entertain at the time.
